Anova Sous Vide

My newest kitchen toy is a sous vide immersion circulator. It can cook things underwater/vacuum at very specific temperatures, which is especially good for slow cooking protein for long periods - allowing tough cuts to be cooked to rare temperatures while still being very tender.

While prices have become drastically lower, associated purchases (a vacuum sealer, Cambro vessels) have kind of elevated it.

Sous Vide Chateaubriand

Chateaubriand is a roast cut from the beef tenderloin. It doesn't really need sous vide treatment, except that it makes getting the interior nice and even very easy. A quick pan sear at the end completes the dish.

Fried Crepe

My neighbor dropped this off for me and I shamelessly begged for more! They kept me fed during a sick weekend when I wasn't really feeling up to cooking. It's a crepe filled with shredded chicken, which is then battered and fried. Really great!

Sous Vide Short Ribs

Beef short ribs cooked for a couple days to medium rare and then pan seared. Super unctuous. Served here over a bed of lentils and sweet potato.

Sous Vide Lamb Leg

Sous vide lamb leg was a bit disappointing - some parts were great, but there was still some dry-ish areas. Possibly I cooked it to too high a temperature.

BBQ Steak and Pineapple

It's BBQ season finally! I've settled on cherry wood as my favorite smoke. This steak was sous vide cooked to medium rare and then grilled with pineapple. However, I'm not using sous vide with steak as much anymore because it's tender already and it tends to overcook by the time I get the level of sear that I want.

Asian Beef Salad

I actually like salad when it's good. Mix-ins are the key. This one has sweet lychees, red peppers, tender beef and walnuts. It's dressed in Kraft Asian Sesame dressing - which is on the sweet side, but I really like it... enough that I don't bother making it from scratch.

BBQ Chicken

Cherry wood smoked BBQ chicken, with a homemade ketchup based BBQ sauce. My base for BBQ sauce is ketchup, balsamic vinegar and brown sugar. I like to season it with cayenne, cumin, paprika and whatever else is on hand.

Maple BBQ

Tried BBQ with maple wood instead of cherry. While I still like cherry best, this was really good. I roasted peppers, asparagus, pineapple and chicken thighs.

I'm supposed to swim in 20 minutes... how's that going to go, I wonder?
